Chia Seed Jam

Unlike traditional jam, this is thickened with chia seeds and has only minimal added natural sugars. 

Chia seeds are a great source of healthy omega 3 fats, and are rich in protein and soluble fibre, which helps feed our gut bacteria and stabilise blood sugar levels. They are an excellent source of slow-release energy, making them an ideal food for extended energy. Delicious with paleo seeded bread or oat cakes.

Ingredients

  • 500g strawberries (or other berries)

  • 2 tablespoons chia seeds

  • Maple syrup or honey (optional if additional sweetness in required)

Method

Place the strawberries (or berries of your choice) in a medium sized saucepan and heat gently, stirring occasionally until the fruit starts to break down and thicken, usually around 5-10 minutes. You don't need to add water as the natural juices in the berries will prevent them sticking. 

Add chia seeds and stir. Cook for another minute or two before removing from the heat, and allow to sit and thicken for 10 minutes. 

If the jam is too thin add more chia seeds, if too lumpy mash with a fork. 

Keep in the fridge in an airtight jar for up to a week.
